1) Boiled mashed veggies - 2 cups
2) Cold milk - 2 cups
3) Bread slices - 4
4) Egg whites of 2 eggs
5) Breadcrumbs - 2 cups
6) Sesame - 2 tsp
7) Oil - 1/4-1/2 cup
8) Salt
9) Pepper
Healthy options for the above ingredients: skim/low fat milk, wholemeal bread, olive oil
Method:
1) Preheat the oven at 200 degrees celsius.
2) Mash the veggies well, add salt and pepper to taste, divide into 4 equal portions and make rolls/balls.
3) Take a bread slice, chop off the edges, dip one side in cold milk, squeeze the excess.
4) Cover the ball with bread by bringing the corners together and pressing into the ball.
5) Dip the ball in egg white, coat evenly and then in breadcrumbs.
6) Place the ball in an over proof dish, drizzle oil on each ball, turn the balls upside down, drizzle oil again.
7) Sprinkle sesame seeds on top of each ball.
8) Bake for 15-20 mins, turn the balls upside down, bake until balls have turned golden brown on both sides.
Tip:
If your bread is breaking, dip one side in cold milk place it on a cutting board with the soaked side upwards, press gently, allowing the other side to absorb milk.
